Alongside Saperavi 2020, this wine marks our very first vintage, making it truly special.
It is a cépage of Qisi and Khikhvi grapes from the cool Maghraani region, complemented by Rkatsiteli from Ruispiri and Mtsvane from Akhmeta, all biodynamically cultivated. Crafted in our cellar in mountainous Tskneti near Tbilisi at an elevation of 1,000 meters (3,280 feet) above sea level, it showcases ancient Georgian techniques.
The grapes are hand-crushed and foot-stomped, fermenting in their entirety, with skins and stems, relying solely on natural wild yeasts. The wine is then gently drained without a wine press.
The result is about 165 liters of a medium-bodied amber wine with balanced acidity and tannins. Flavors of quince and yellow-green fruits mingle with earthy notes in this unfiltered wine, unfolding on the palate and concluding with a refreshingly memorable finish.
Aged in stainless steel to preserve its natural essence, the wine is bottled after approximately three years, with minimal intervention – no added sulfur except for a gentle bottle rinse.
