From the Akhmeta region's cool climate, this amber wine showcases a cépage of biodynamically grown Qisi grapes, along with Khikhvi, Rkatsiteli, Mtsvane, and Grdzelmtevana grapes, crafted using traditional Georgian methods in our cellar in mountainous Tskneti near Tbilisi at an elevation of 1,000 meters (3,280 feet) above sea level.
Hand-crushed, the grapes are fermented in their entirety, with skins and stems, relying solely on natural wild yeasts. The wine is then gently pressed.
This approach yields about 145 liters of a medium-bodied wine with balanced acidity and a crisp structure, featuring flavors of ripe peach, apricot, and hints of citrus zest that mingle with subtle earthy notes unfolding in a fresh and memorable finish.
Aged in stainless steel to preserve its essence, this unfiltered wine is bottled after approximately three years, with minimal intervention – no added sulfur except for a gentle bottle rinse.
