Alongside Qisi 2020, this wine marks our very first vintage, making it truly special.
It is a cépage of Saperavi and Ikalto's Tsiteli grapes, biodynamically produced in the cool-climate Ikalto region. Crafted in our cellar in mountainous Tskneti near Tbilisi at an elevation of 1,000 meters (3,280 feet) above sea level, it is made using traditional Georgian methods.
The grapes are hand-crushed and fermented in their entirety, with skins and stems, relying solely on natural wild yeasts. The wine is then gently drained without a wine press.
The result is about 175 liters of a full-bodied, rich wine with velvety tannins, balanced acidity, and a deep, inky purple hue. Dark berries, earthy notes, and a satisfying structure unfold on the palate of this unfiltered wine, culminating in a long, unforgettable finish.
Aged in stainless steel to preserve its authentic character, the wine is bottled after approximately three years, with minimal intervention – no added sulfur except for a gentle bottle rinse.
