

Originating from the cool-climate Akhmeta region, where these biodynamically grown Saperavi and Simonaseuli grapes are cultivated, this artisan red wine is a cépage crafted in our cellar in mountainous Tskneti near Tbilisi at an elevation of 1,000 meters (3,280 feet) above sea level using traditional Georgian methods.
The grapes are hand-crushed and fermented in their entirety, with skins and stems, relying solely on natural wild yeasts. The wine is then gently pressed.
The result is about 175 liters of a full-bodied, deep inky purple wine with velvety tannins, balanced acidity, and a robust structure. Earthy and dry, yet bursting with dark fruit flavors, this unfiltered wine is stunning, unfolding in a surprisingly delicious and lingering finish.
Aged in stainless steel to preserve its authentic character, the wine is bottled after approximately three years, with minimal intervention – no added sulfur except for a gentle bottle rinse.
