

This is the third Saperavi crafted since our winemaking journey began in 2020. This low-yield, artisan Saperavi hails from the cool-climate Akhmeta region, where grapes are cultivated biodynamically. Notably, this varietal stands alone, showcasing the pure character of Saperavi without any blending.
The wine is crafted in our cellar in mountainous Tskneti near Tbilisi at an elevation of 1,000 meters (3,280 feet) above sea level using traditional Georgian methods. The grapes are hand-crushed and fermented in their entirety, with skins and stems, relying solely on natural wild yeasts. The wine is then gently hand-pressed without a wine press.
This yields about 155 liters of deliciously full-bodied and chewy wine that boasts a deep, inky dark purple color, with a robust structure, balanced acidity and alcohol content. On the nose, rich dark berries and fruit explode, tempered by a firm earthiness and dryness, all wrapped in velvety tannins that unfold in a long, unforgettable finish.
To preserve its authentic character, this unfiltered wine is aged in stainless steel for about two years without the use of sulfur, showcasing the pure essence of the majestic Saperavi grape.
