From the esteemed region, our first-ever Tsarapi wine showcases dry-farmed Rkatsiteli grapes from old vines in a family-owned vineyard in the heart of the original appellation.
The wine is crafted in our cellar in mountainous Tskneti near Tbilisi at an elevation of 1,000 meters (3,280 feet) above sea level using traditional Georgian methods. The grapes are hand-crushed and fermented in their entirety, with skins and stems, relying solely on natural wild yeasts. The wine is then gently drained without a wine press.
The result is about 210 liters of a refreshing, lively wine with a cloudy gold hue and medium body. This unfiltered wine reveals fresh citrus and honey notes on the nose, complemented by hints of late harvest fruit on the palate. Earthy undertones and minerality balance the wine's playful acidity, while velvety tannins wrap the finish in a memorable conclusion.
True to the Tsarapi grape's noble spirit, this wine is stainless steel-aged for about two years, made without sulfur additions to highlight its pure varietal charm.
